Menu Plan Monday

Wow! I've fallen a behind on updating - last week was so HECTIC. Hopefully things will be better this week. I did re-organize my closet last week. I forgot before pictures, but will hopefull post after pictures soon.

Monday - BBQ'd hot dogs and potato salad
Tuesday - Taco Salad
Wednesday - Roast in the crockpot with some veggies
Thursday - Biscuits and gravy
Friday - BBQ beef sandwiches (left overs from the roast with some honey BBQ sauce)
Saturday - Alfredo and garlic bread w/ salad
Sunday - Pizza Out ($5.00 from Little Ceasars)

Biscuit recipe

2 c. Flour
4 tsp baking powder
½ tsp salt
1 tbsp sugar
½ c shortening
¾ c milk

Sift flour, baking powder salt and sugar in a mixing bowl. Cut in shortening with fork or pastry blender until it is in pea size crumbs. Add milk and stir in until just mixed.

Turn dough out on to a floured surface and knead until just mixed – I only knead a few times to make sure they are light and flaky. Roll out to about ¾ inch, cut and place on baking pan. Bake at 450 for about 7 or so minutes (this is not exact, I just usually watch until they are nice and golden brown.)

Makes about 8 depending on thickness and size of the biscuits

I did it!

Thanks for the encouragement everyone!, I went to the store yesterday and was able to stay within my $15 budget.

2 pkgs hot dogs @ $1 each
1 pkg bacon @ $2.50
2 gallons milk 2 for $5
pkg cheddar cheese $3.00

Grand total = $12.50


I'll post my biscuit recipe when I get home later.

Menu Plan Monday


Monday is tomorrow, but I don't know if I'll get a chance to do it then, plus it's on my mind at the moment, here is my menu for the week. Things are squeaky tight this week - My budget until Friday is $15.00. Yep I am going to have to be creative.

So here goes! This includes some notes to myself to remember too.

Monday:
Tacos
*I have ground beef in the freezer, taco seasoning and some taco shells and lettuce - I just need to pick up some cheddar cheese at the store.

Tuesday:
Biscuits and Gravy
*I found a recipe I FINALLY like for homemade biscuits that I will use and use up more of the frozen ground beef.

Wednesday:
Potatoes with Hot Dogs
*Have potatoes just need to pick up some hot dogs at the store, top with some of the cheddar and baked in the oven these are a simple dinner that my kids love. Me not so much, but I'm making due here!

Thursday:
Potato Soup
*I will save some of the potatoes from yesterday and mash them up for some soup. I won't have the bacon for seasoning, but I'll just saute some onion and throw in some celery seasoning and it should be okay. May need to pick up some milk at the store too.

Friday:
Something special - I haven't decided for this day. I'll update it when I decide what to make~
Yay payday! :o)


Frustration

I haven't been near a computer for a few days now so I thought I would "play" with this blog for a bit and get it to be more like what I want. But Nooooooo! I am so frustrated with this at the moment. I'm usually pretty smart figuring out things, but I can't figure out this system how to add things, feeds etc, and what the heck is a widget and where do I put one LOL! Arrrrgh Anyone have any help sites or just some advice to get me going here?

Getting kids to clean

I'm so frustrated with my kids!!! ARRGH!! Is there any seceret to getting kids to clean up after themselves? No? Really? Oh come on help me out here! LOL

I feel like I am constantly yelling at them and nagging them to do the things that they KNOW they are responsible for.

I'm considering typing up "Chore Lists" again like I had do years ago. Something to remind them of what needs to be done each and every day.

When I get them created I'll post them here. Maybe they'll help someone else as well.

Easy Potato Soup

I'm planning on putting much more on here, but for now here's my easy potato soup.

4 Potatoes
2 slices bacon
1/2 c. onion, diced
1/2 c celery, diced
Enough milk to cover the potatoes

Boil the potatoes for about 20 minutes or until fork tender.

While boiling potatoes, cut up the bacon into small pieces and fry in a pan. When the bacon is almost done, add onion and celery pieces to the pan and saute until softened.

Drain most of the water from your potatoes, and add cream or milk (I prefer whole milk) to the potatoes until covered by about an inch. Take a potato masher and mash the potatoes until they are in bite-sized pieces. Add the bacon, onion and celery and salt and pepper to taste. Heat on the stove until hot or ready to serve.

I like to add some cheddar cheese to mine or a bit of sour cream to change the taste a bit.

Serves my family of 3 with plenty of leftovers.
