Long time

So after my grandma died, things got a bit difficult around here and I haven't had any time to post. I would like to get back to doing this again though so hopefully I can figure out a way to do it.

Things to do
My menu for the next few days.
Take stuff from Christmas to storage. (I took most of it earlier, this was stuff we found later!) Ugh.
Saturday - basketball and cleaning grandpa's area
Sunday - resting (I hope!)

Make some homemade bisquick mix. Maybe on Saturday

Menu Plan Monday

Monday - Pizza (leftovers from football party on Sunday)
Tuesday - Leftover turkey and stuffing (from Thanksgiving)
Wednesday - Chili and cornbread (Grandma gave us some pinto beans)
Thursday - probably something simple like Spaghetti
Friday - Refrigerator Roulette!!! There's tons of stuff in the fridge and freezer to get rid of so we'll just pull stuff out and mix and match.

I love good, clean, fun, action packed movies that my kids and I both can enjoy...and the first one was great... I can't wait until this one hits the big screen. I dont' often visit the actual movie theatre to watch a movie, but this will definitely be an exception. I've added a preview at the bottom of my page for a while. Enjoy!

Life Has Flown Right Past Me...

I haven't had a chance to update this in a long time... Life gets so busy sometimes.

Most of my time is spend driving kids to and from things like volleyball practice and games and karate. Of course to that I decided to volunteer to be team mom for the volleyball team... so more added responsibilities there, like buying pizza or making dinner for the nights the girls have a late game, making up snack bags and trying to come up with some way to make them all happy with what I do.

Then throw in the fact that I've moved into my grandparents basement for a short time to try and save money to buy a house, and my life has been mass chaos for a while now.

Woo Hoo!! I am sooo excited right now! Thanks to Rona, I have found a way to fuel my love for reading. It's Paperback Book Swap. I really enjoy reading books, but particularly the Love Inspired line of Christian romance novels, but they are too expensive for me right now. So now I have a new way of being able to "feed my habit" with out breaking the bank. :)

Monday - Leftover Roast from Easter Sunday (probably in sandwich form)
Tuesday - Spaghetti (I got a bunch of stuff for this from my friend so this will be an ongoing meal for a while)
Wednesday - Hamburgers on the grill
Thursday - Something with the boiled eggs that we made for easter (suggestions would be great!)
Friday - Homemade pizza

New Car

It's a 2004 Suzuki Forenza....and guess what..... I own one!!!! :D :D *does the happy dance*

I bought it on Saturday. Yay me!!! It has all kinds of stuff but most of all it was a one owner car with only 19,000 miles on it!!!! It still has factory warranty left on it and it is in such great condition.

My budget is so squeaky tight right now that it might be tough at times, but the dealership financed me. I wouldn't budge on what I wanted and I got a MUCH better deal then I ever thought I would!!!

This is THE newest and nicest car I have ever had and I don't feel like it will break down the next time I turn it on...can you tell I'm excited? :) I'll get a "real" picture of it posted once I have some more time - I'm at work at the moment.

Busy, busy bee

Wow time flies when things are crazy!!

What's been going on?

My new nephew was born - isn't he cute!?! We spent he first two weeks of his life with my sister and her husband helping them with things - the birth was a bit traumatic and my sister had to have a cesarean to deliver him and was really in pain and depressed. She's doing much better now though.

Second, my kids were on spring break this week and the weather was BEAUTIFUL here. Low 70's, no clouds and what happens??? My son comes down with the CHICKEN POX !!!!!! So we spent the whole beautiful week virtually stuck inside. :(

But we used it to our advantage and did a bunch of housekeeping and started some spring cleaning tasks. Plus our Blockbuster movies came and so we were able to use up some time with those. Now I'm working on getting the outside things done - our porch cleaned up and planters ready for planting.

Not including kids in karate, and volleyball - and today is the first day of track for my daughter!!! AAAHHH Luckily volleyball will be over soon and that will help a bunch.

Anyway off to the races again. :)

Wow! I've fallen a behind on updating - last week was so HECTIC. Hopefully things will be better this week. I did re-organize my closet last week. I forgot before pictures, but will hopefull post after pictures soon.

Monday - BBQ'd hot dogs and potato salad

Tuesday - Taco Salad

Wednesday - Roast in the crockpot with some veggies

Thursday - Biscuits and gravy

Friday - BBQ beef sandwiches (left overs from the roast with some honey BBQ sauce)

Saturday - Alfredo and garlic bread w/ salad

Sunday - Pizza Out ($5.00 from Little Ceasars)

Biscuit recipe

2 c. Flour
4 tsp baking powder
½ tsp salt
1 tbsp sugar
½ c shortening
¾ c milk

Sift flour, baking powder salt and sugar in a mixing bowl. Cut in shortening with fork or pastry blender until it is in pea size crumbs. Add milk and stir in until just mixed.

Turn dough out on to a floured surface and knead until just mixed – I only knead a few times to make sure they are light and flaky. Roll out to about ¾ inch, cut and place on baking pan. Bake at 450 for about 7 or so minutes (this is not exact, I just usually watch until they are nice and golden brown.)

Makes about 8 depending on thickness and size of the biscuits

Thanks for the encouragement everyone!, I went to the store yesterday and was able to stay within my $15 budget.

2 pkgs hot dogs @ $1 each
1 pkg bacon @ $2.50
2 gallons milk 2 for $5
pkg cheddar cheese $3.00

Grand total = $12.50

I'll post my biscuit recipe when I get home later.

Monday is tomorrow, but I don't know if I'll get a chance to do it then, plus it's on my mind at the moment, here is my menu for the week. Things are squeaky tight this week - My budget until Friday is $15.00. Yep I am going to have to be creative.

So here goes! This includes some notes to myself to remember too.

Monday:
Tacos
*I have ground beef in the freezer, taco seasoning and some taco shells and lettuce - I just need to pick up some cheddar cheese at the store.

Tuesday:
Biscuits and Gravy
*I found a recipe I FINALLY like for homemade biscuits that I will use and use up more of the frozen ground beef.

Wednesday:
Potatoes with Hot Dogs
*Have potatoes just need to pick up some hot dogs at the store, top with some of the cheddar and baked in the oven these are a simple dinner that my kids love. Me not so much, but I'm making due here!

Thursday:
Potato Soup
*I will save some of the potatoes from yesterday and mash them up for some soup. I won't have the bacon for seasoning, but I'll just saute some onion and throw in some celery seasoning and it should be okay. May need to pick up some milk at the store too.

Friday:
Something special - I haven't decided for this day. I'll update it when I decide what to make~

Frustration

I haven't been near a computer for a few days now so I thought I would "play" with this blog for a bit and get it to be more like what I want. But Nooooooo! I am so frustrated with this at the moment. I'm usually pretty smart figuring out things, but I can't figure out this system how to add things, feeds etc, and what the heck is a widget and where do I put one LOL! Arrrrgh Anyone have any help sites or just some advice to get me going here?

Getting kids to clean

I'm so frustrated with my kids!!! ARRGH!! Is there any seceret to getting kids to clean up after themselves? No? Really? Oh come on help me out here! LOL

I feel like I am constantly yelling at them and nagging them to do the things that they KNOW they are responsible for.

I'm considering typing up "Chore Lists" again like I had do years ago. Something to remind them of what needs to be done each and every day.

When I get them created I'll post them here. Maybe they'll help someone else as well.

Easy Potato Soup

I'm planning on putting much more on here, but for now here's my easy potato soup.

4 Potatoes
2 slices bacon
1/2 c. onion, diced
1/2 c celery, diced
Enough milk to cover the potatoes

Boil the potatoes for about 20 minutes or until fork tender.

While boiling potatoes, cut up the bacon into small pieces and fry in a pan. When the bacon is almost done, add onion and celery pieces to the pan and saute until softened.

Drain most of the water from your potatoes, and add cream or milk (I prefer whole milk) to the potatoes until covered by about an inch. Take a potato masher and mash the potatoes until they are in bite-sized pieces. Add the bacon, onion and celery and salt and pepper to taste. Heat on the stove until hot or ready to serve.

I like to add some cheddar cheese to mine or a bit of sour cream to change the taste a bit.

Serves my family of 3 with plenty of leftovers.
